    In the heart of the Salamanca neighbourhood, in the Palacio de Saldaña, we find this restaurant, the new culinary adventure of chef Aurelio Morales after leaving his previous project, Cebo, which earned him a Michelin star and two Repsol suns. In Abya, the chef is committed to unbridled cuisine, given free rein, connecting global and Latin American gastronomy. It is scheduled to open in early 2023.

    The restaurant is divided into four interconnecting floors, each offering a different dining experience. On the basement level, you will find the different cuisines where all the dishes are from. On the ground floor, the kitchen is open all day, and two bars serve up an original proposal that fuses mixology, music and art. The first floor, with large picture windows, will be dedicated to culinary hedonism, focusing on the individual tastes of each diner. And the second floor will be a space dedicated to the senses, a more intimate setting, with the occasional culinary surprise, where there is also a magnificent outdoor terrace.

    The decor in ABYA has been designed by its owner, Manuel González, along with interior designer Paulina Moran and other decorators. ABYA will also have more than 100 works of art on display throughout, by artists such as Vladimir Cora, Amador Montes, César Lope Negrete, Miguel Milló, and Paola Martínez.

    ABYA takes its name from the oldest known denomination used to refer to the Americas and it means ‘land of life’ or ‘land in its full maturity’, an idea reflected in the restaurant’s gastronomic proposal, which will offer options for any time of the day, from lunch through to the evening.
