    Information

    Founded in 1702, although it is not documented until 1825, it is one of the references of Spanish and traditional Madrid cuisine, where age-old recipes are prepared with the finest ingredients.  It is a really welcoming place with old objects decorating the walls, a brick wine cellar and a pleasant terrace.

    The restaurant’s origins as an inn and restaurant are linked to the town of Fuencarral (now the Fuencarral neighbourhood), where the original guesthouse catered for travellers on the road from France and new arrivals in Madrid. Fuencarral main source of income was farming, mainly agriculture and cattle. It was also a Royal hunting area and hosted the Royal Huntsmen. Although it was always owned by the Guiñales family, the inn was known by various names during different periods, and you can still find references to “Mesón Nuevo”, “Casa de la Silvestra” and “Casa de La Pascuala”.

    Its dining room on the ground floor is accessible for people with reduced mobility.  It also has private dining rooms, perfect for business meetings, for 2 to 14 diners.

    The menu features specialities including homemade stews, rabbit with garlic sauce and lamb roasted in a wood-burning oven, all washed down with wines from their own cellar. Its clients include leading figures from the arts, sport, show business and royalty.
