    His work is characterised by his fondness for experimenting with shapes and creating new designs and textures, delighting the palate with surprising flavours. Sight and taste are the senses that Balaguer targets with his creations, using the best cacao available on the market, combined with other ingredients such as brandy, spices, herbs and fruit, to create a full, varied range of chocolate products.

    His work is distinctive for its avant-garde presentation, with its original shapes, textures and aromas. His creations are available in various collections: Nipón, Chocotube, globes, Easter eggs, T’Estimo, El Juego del Chocolate, and tablets using different types of cacao and other ingredients. Twice a year he also introduces a new range of desserts and cakes in his Spring-Summer and Autumn-Winter collections.
